Mutton Burger

Mutton makes a bold and flavorful burger that stands apart from the usual beef. Because the meat is rich and well-aged, it pairs beautifully with bright, fresh toppings that balance its depth. Mint, and a tangy pepper sauce make this burger unforgettable.

Ingredients

  • 1 pound ground mutton
  • 5 garlic cloves, finely crushed, divided
  • 4 tablespoons fresh mint, finely chopped
  • 3 teaspoons ground coriander
  • 1 tsp smoked paprika
  • ½ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • ¼ cup Mama Lil’s Peppers, finely chopped
  • 1 teaspoon cooking oil
  • Salt & pepper to taste
  • 4 burger buns
  • 4 leaves Romaine lettuce
  • 1 red onion, cut into rings

Instructions

In a bowl, mix together the mutton, 3 minced garlic cloves, 4 tablespoons of chopped mint, ground coriander, and smoked paprika. Form the mixture into 4 burger patties, season generously with salt and pepper, and then chill them in the fridge until they are ready to cook.

In a clean bowl, mix together the yogurt, lemon juice, the 2 remaining minced garlic cloves, and the Mama Lil’s Peppers. Refrigerate this sauce until ready to use.

Preheat the grill on high, lightly oil the lamb patties, and then cook for about 4 minutes each side. Place the halved burger buns under the grill for 30 seconds to 1 minute, until they are lightly toasted.

Spread a little of the pepper sauce on the burger bun, top with a burger patty, a few slices of red onion, some more of the mayonnaise sauce, and some salad leaves.
