Ingredients
- 1 lb chicken thighs
- ½ sweet onion, thinly sliced
- 4 cloves garlic, minced
- 1 cup soy sauce
- 1 cup apple cider vinegar
- ½ cup chicken stock (water is fine too)
- ½ cup Cola (root beer or lemon-lime soda also work here)
- ⅓ cup brown sugar
- ½ cup whole peppercorns
- Salt to taste since the soy sauce already adds a lot of salinity

In a pan on medium heat, brown chicken thighs on one side. Remove from the pan and set aside. Add onions and deglaze the pan with the moisture released from the onions. Add garlic briefly to lightly toast (garlic burns very quickly). Add remaining ingredients except salt and bring the liquid to a simmer. Add the chicken thighs back to the pan and cover. Braise on medium-low heat until thighs are cooked through, about 20 minutes.
