Ingredients
- 1 lb CF Ground Beef
- 1 yellow onion, diced
- 1 small red bell pepper, diced
- 3 cloves garlic
- 2 Tbsp chili powder
- 1 Tbsp chipotle powder
- 3 Tbsp tomato paste
- 1 28 oz can diced tomatoes
- 1 can red kidney beans, drained and rinsed
- 2 cups beef stock
- 1 bag corn chips of your choice
- Toppings of your choice
- Salt and pepper, to taste

Instructions
Heat a large pot over medium heat. Add the ground beef and season generously with salt and pepper. Once browned, add onion, bell pepper, and garlic and saute until soft and fragrant. Add spices and stir to combine. Add the tomato paste and stir to disperse. Add the canned tomatoes, beans, and beef stock and let simmer for a an hour and a half.
To serve, place chips at the bottom of the bowl. Top with chili, and then toppings of your choice. Enjoy!
