Lamb Kebab Bowls with Tzatziki

If you love a kebab, but don’t like fussing with skewers, this is the recipe for you! It gives you all the flavor in half the time, and you can swap the pita for roasted sweet potatoes or something else nutritious!

Ingredients

  • 2 cups Greek Yogurt
  • 2 mini cucumbers, diced very small
  • 3 Tbsp finely chopped mint, plus more for garnish
  • Juice of half a lemon
  • 1 clove of garlic, grated
  • 1 small yellow onion, finely diced
  • 1 lb ground lamb or mutton
  • ½ tsp ground turmeric
  • ½ tsp crushed red pepper flakes
  • 1 tsp smoked paprika
  • ¼ cup walnut pieces
  • ¼ cup golden raisins or sultanas
  • Salt & pepper to taste
  • Pomegranate molasses, for serving

Instructions

Combine the yogurt, cucumbers, mint, lemon juice, and grated garlic in a medium bowl. Salt & pepper to taste. Mix to combine and chill until ready to serve.

In a large pan over medium-high heat, add a glug of olive oil. Add the onion, lamb, spices, & walnuts. Season with salt and pepper to taste. Break up the ground meat, stirring to combine with other ingredients as it cooks. Once the mixture is well combined, let cook undisturbed for 8-10 minutes, or until the meat is well browned on one side. Add the raisins and stir to combine again, cooking to desired doneness. Remove from heat.

To serve, spread a generous amount of tzatziki on the bottom of each bowl and top with the meat. Finish with a drizzle of pomegranate molasses and chopped mint.
