Remove from the pan and set aside. Add onions and deglaze the pan with the moisture released from the onions. Add garlic briefly to lightly toast (garlic burns very quickly). Add remaining ingredients except salt and bring the liquid to a simmer. Add the chicken thighs back to the pan and cover.
